It may not be native to Pampanga, but Tokwa’t Baboy is still a Filipino dish that has people driving up to the city to enjoy. Perhaps the reason why this pork side dish is still popular in the area is because it’s often paired with sisig. The dish’s mix of boiled pork, fried tofu, vinegar, and soy sauce is a usual starter on a fun night out of drinking.
