    1. Toasted Forbidden Rice from Papa Diddi’s

    Partnering with the local farmers, Papa Diddi's ice cream tells a story of a bond created by Papa Diddi as a lawyer and the farmers he offers his services to. Together, they created the Toasted Forbidden Rice sorbet. It is one of their signature ice cream flavors, which gives a unique taste of Cordillera’s black rice, or the balatinaw, originally served to royalties only. This sorbet is made with coconut milk and balatinaw bits.

    2. Tinutong na Kanin from Manila Creamery

    Another ice cream flavor that unleashes the potential of burnt rice is Manila Creamery’s Tinutong Na Kanin. One spoonful will allow you to taste the bittersweet taste of burnt rice, coconut milk, sweet macapuno, and red beans. You can order a pint which is good for four servings. Half a gallon is also available which is good for 15 servings.

    Yes, you heard that right. Kurimu, a premium handcrafted ice cream brand, uses soy sauce or shoyu for their Shoyu Caramel ice cream. The rich combination of the sweet and savory flavors is just the right balance to get a taste of “complex caramel notes and a hint of umami.”
